Tips to Beat the Heat!

It has certainly been hot on the farm this week!!!!  So, here's some tips to beat the heat when you have to be outdoors tending your garden...or glad you don't have to because your are supporting your local farm. (:

Tips to beat the heat!

  1. Get out to your garden at 6am or after 7:30pm.  Yup, it's cool, pleasant, and those veggies are crisp and nice at that time.  No wilted leaves or wilted farmer either.  Yes, it does make for longer hours this time of year.  Maybe a nap mid afternoon???  Now that would be a luxury!
  2. Wear a hat.  Yeah, some of you may think your hair will get messed up, but it does work to help keep you cool and face protected when you are in the sun.
  3. When really hot, but must get the task done (ehem...weeds, fix the broken sprinkler, etc.), wet your hat, then put it on.  I love this one!
  4. Wear a wet neck cloth (dish towel, rag or old T-shirt will work).
  5. Keep hydrated with water or "re-charging" water.  I make my own easy re-charging drink by adding a little lemon juice, pinch of salt, and dab of honey to a cool glass of water.
  6. Walk slowly through your sprinkler and don't stay out in the heat too long.
  7. Dabble your toes in the creek or kiddie pool.
  8. And now for the best one...Make some home made ice-cream or popsicles to reward the family when you are done with the task and need a little reward.

And now for John's amazing...

Coconut Ice Cream

Ingredients:
  • 1 can coconut milk
  • 1/2 c. raw cashews
  • 1/2 c. pitted dates
  • 1/2 c. honey
  • 1 Tbsp. vanilla flavoring
  • 1/2 tsp. salt
  • 1/16" slice of lemon, with peel
  • 1 tray ice cubes
  • Water, as needed.

Making Instructions:

  1. Blend all ingredients except the ice cubes and water until creamy smooth.
  2. Blend in ice cubes and add water until mixture reaches 5 cups combined. 
  3. Pour into a casserole dish and freeze.

Serving Instructions:

  1. Pour hot water over the bottom of the casserole dish to loosen.
  2. Cut into 1.5 inch strips.
  3. Run the frozen strips through a Champion Juicer to turn into soft-serve ice cream. 
  4. Can be placed back in the freezer for a while until ready to serve, to keep frozen.
  5. Serve with various toppings, berries, etc.
